What is Umami?
Umami is the fifth taste, alongside sweet, sour, salty and bitter. Often described as deep savoury richness, it gives Japanese cuisine warmth, balance and lingering depth. Kombu and bonito work together in dashi to create a remarkably harmonious flavour.
